Cottage Cheese Potato Pancakes

3 tbsps Canola Oil, for baking sheet 42g
5 Potatoes 1065g
1 Onion 110g
2 Eggs 88g
1 cup Cottage Cheese 226g
1/2 cup Cheddar Cheese 66g
1 tsp Baking Soda 4.6g
1/2 tsp Salt 3g
1/4 cup Potato Flour 40g
pinch Ground Nutmeg 0.1375g
2 cups Apple Sauce* 488g
1/2 cup Sour Cream* 115g* Optional

Preheat oven to 425°F. Oil 1-2 baking sheets with 1tbsp oil each. Grate onions and potatoes (together). Whisk together eggs and cheeses, then add to potato mixture. Mix together dry ingredients and add to batter in batches until combined. Spread 6 pancakes per sheet. Bake 30min, flipping midway. Place on paper towels to remove oil. Serve with apple sauce and sour cream.
