Egg-Free Waffles

Ingredients

Yields: 4 Waffles (4 Servings)

1 1/4 cups Almond, Millet, or Other Flour (see tip) 156.25g
1/2 cup Potato Starch
2 tsps Baking Powder 9.2g
1/2 tsp Salt 3g
2 tbsp Sugar or other sweetener 25g
1/4 cup Apple Sauce or other puree 61g
2 tbsp Oil 27.2g
1/2 cup Any Milk or Water 122g

ALWAYS check labels before buying or consuming!
Separately, mix dry ingredients together and wet ingredients together, then combine by gradually adding liquid into dry until you have a cake batter consistency. Preheat and oil waffle iron. Spread batter evenly on iron. Cook until steam diminishes.

Tips

Ingredient Tip • Only use 1/2 cup liquid if using almond flour. Use 1 cup if using a thicker milk. Use 1 3/4 cups liquid if using a very thick liquid like full-fat coconut milk.
Ingredient Tip • Coconut, white rice and amaranth flour do not work well in this recipe.
Ingredient Tip • Substitute the starch for flour if using an all purpose or gluten-free flour mix.
