1 3/4 cups Brewed Coffee 434g
4 tsps Sugar 16.64g
2 cups Heavy Cream 240g
1 cup Mascarpone 232g
1/2 cup Sugar 100g
1/3 cup Marsala Wine 66g
25-30 Ladyfingers 207.5g
cocoa powder** Optional

Separately, mix warm coffee and 4tsp sugar. Set aside to cool. Place bowl in freezer for 30min. Beat cream in it until very thick. Beat in the mascarpone and 1/2 cup sugar, then the marsala. Refrigerate. Quickly dip one side of each ladyfinger in coffee mixture, then place at bottom of serving dish. Layer the ladyfingers to fill the bottom of serving dish. Pour half the refrigerated cream on top. Repeat with another layer of dipped ladyfingers and the remaining cream. Sprinkle with sifted cocoa. Refrigerate 5 hours or more.
