Ingredients

3 cups Flour 375g
1 cup Cocoa Powder 86g
1 pinch Salt 0.2g
4 Eggs 176g
1 cup Sugar 200g
12 tbsps Butter 170.4g

Melt and cool butter. Beat eggs and sugar until thick and pale. In a separate bowl, whisk dry ingredients, then gradually fold them, then the butter, into batter. Refrigerate one hour. Preheat oven to 425°F. Spoon batter into greased madeleine pan and bake 7min. Unmold immediately.
