    2 cups Cooked Quinoa 370g
    1/4 cup Coconut Oil 54.5g
    1/2 cup Butter 113.5g
    1/2 tsp Cream of Tartar 1.5g
    1 1/2 cups Sugar 300g
    3/4 cup Cocoa Powder 64.5g
    1 1/2 tsps Baking Powder 6.9g
    1/2 tsp Baking Soda 2.3g
    1/2 tsp Salt 3g
    1 cup Almond Meal 95g
    4 Egg Yolks 68g
    1/3 cup Milk 80.52g
    1 tsp Vanilla Extract 4.2g
    1/2 tsp Almond Extract

    4 tbsps Cocoa Powder 21.6g
    2 tbsps Butter 28.4g
    1 cup Confectioners’ Sugar 120g
    1/4 tsp Vanilla Extract 1.05g
    1/4 tsp Almond Extract
    2 tbsps Water 29.56g
Blanched Slivered Almonds** Optional

CAKE: Preheat oven to 350°F. Grease and line 9" cake pan. Beat egg whites and cream of tartar to form stiff peaks. Whisk together all remaining dry ingredients. Blend quinoa, milk, egg yolks, vanilla, almond, butter, and oil until smooth. Pour into the dry ingredients and mix to combine. Fold in the egg whites. Bake 45min until toothpick comes out just moist. Wait 10min before removing from pan. GLAZE: Mix all ingredients together, then pour over cooled cake. Immediately garnish with slivered almonds.
