Fruit and Nut bread

Ingredients

Yields: 15 slices (15 Servings)

150 g Quinoa Flour 150g
150 g Buckwheat Flour 150g
40 g Potato Flour 40g
50 g Tapioca Starch 50g
2 tsp Salt 12g
2 tsps Caster Sugar 7.62g
2 tsps Xanthan Gum
4 tsps Instant Yeast 16g
1 cup Date 260g
1 cup Walnut 125g
1/2 cup Raisin 77.5g
1/2 cup Pepitas 32g
500 ml Water 500g
2 tbsps Olive Oil 27g

ALWAYS check labels before buying or consuming!
Lightly grease and line with baking paper a large bread/loaf tin. Whisk dry ingredients and yeast together. Mix in dried fruit and nuts. Separately, combine water and oil. Stir into dry ingredients until thoroughly mixed. Preheat oven to 350°F (180ºC), leaving bread on top of stove to rise. Bake 40min, flip bread (onto a baking sheet), and bake another 10min.
