Fruit Clafoutis Egg Tart

Clafoutis is a French crustless tart that is much like a thick fluffly crepe with fruit. Choose any fruit or combination, and call it “clafoutis aux __”.

Ingredients

Yields: 8 Servings

Grams 
1 tbsp Butter 14.2g
2 cups Fruit 246g
1 cup Whole Milk 244g
1/2 cup Sugar 100g
3 Eggs 132g
1 tsp Vanilla Extract 4.2g
1/2 cup Flour 62.5g
1/2 tsp Salt 3g
1 tsp Confectioners’ Sugar 2.5g
1 tbsp Vegetable Oil 13.6g

Preheat oven to 400°F. Liberally butter or oil a 10” tart pan (ceramic works well). Wash fruit and remove any pits. Cut into 1/2” pieces if need be (about the size of a raspberry or half a cherry.) Beat or mix eggs, salt, sugar and vanilla, then flour, until smooth. Slowly add milk and keep mixing until all is incorporated and batter is smooth. Pour batter into pan, then place fruit evenly in pan. Bake 45min. Cool then powder with sugar. Serve at room temperature. Store in fridge up to 4 days.
