Quinoa Potato Carrot Ginger Soup

Ingredients

Yields: 7 cups (7 Servings)

3 tbsps Olive Oil 40.5g
1 clove Garlic, minced 3g
1 tbsp Ground Ginger 5.2g
1 tsp Ground Cumin 2g
2 Potatoes, peeled and cubed 426g
4 Carrots, peeled and sliced
1 cup Quinoa 170g
 4 cups Vegetable or Chicken Stock 960g
1/2 cup Sour Cream, for garnish* 115g* Optional

Saute garlic 1min in hot olive oil, then stir in cumin and quinoa. Add remaining ingredients (Except for stock), and saute another 8 minutes. Add stock and cook 20 minutes. Blend until creamy. Serve with a dollop of sour cream.
