1/8 tsp Sea Salt 0.78g
1 tsp Lemon Rind 2g
1 1/4 cups Caster Sugar 228.75g
2 cups Carrot, grated 220g
1/4 cup Potato Flour 40g
1/2 tsp Cream of Tartar 1.5g
1/4 tsp Baking Soda 1.15g
1/4 cup Besan Flour 23g

Preheat oven to 320°F (160°F). Line large square pan with parchment. Beat 5 egg yolks, sugar, and lemon rind until pale yellow and thick. Stir in grated carrot, almonds flour, besan flour, potato flour, baking soda and cream of tartar. In separate bowl, beat 5 egg whites with salt to form soft peaks. Fold into the yolk mixture. Bake 30-35 min Optionally dust with confectioners' sugar.
