2 cups Corn Meal 234g
 3 tbsps Maple Syrup (or Honey for non-Vegan) 63g
1 tsp Salt 6g
1/4 cup Apple Sauce 61g
 1/4 cup Coconut Oil or Olive Oil 54.5g
diced Poblano Pepper* 64g
diced Jalapeno Pepper*

Preheat oven to 375ºF. Line muffin tin. Combine milk and vinegar then set aside. Separately, whisk dry ingredients together, and wet ingredients (including milk and vinegar mixture) together, then gradually combine wet and dry while thoroughly whisking. Stir in the optional ingredients like cheese, peppers or corn. Bake 20-25 min.
