1/2 tsp Baking Soda 2.3g
3/4 tsp Baking Powder 3.45g

1/2 cup Buttermilk 122.5g

Preheat oven to 350°F (177°C). Line muffin tins. Whisk together eggs, oil, vanilla extract and sugar. Separately, mix together remaining dry ingredients. Alternate adding half the wet mixture and half the buttermilk to the dry ingredients, mixing until barely combined. Bake 18min.

Ingredient Tip • Do not use alkalized cocoa (like Dutch-process) because it will lessen the baking soda leavening reaction.
