This is a grain-free version of a traditional French tart from Alsace.

Ingredients

    1 cup Almond Flour 227g
    1/3 cup Tapioca Starch 42.24g
    2 tbsp Sugar 25g
    1/4 tsp Salt 1.5g
    1/3 cup Butter 74.91g
    2 tbsps Water 29.56g

    2 Apples 364g
    1/2 tsp Pure Vanilla Extract 2.1g
    2 Eggs 88g
    1/2 cup Sugar 100g
    1/2 cup Heavy Cream 60g
    1/2 cup Sour Cream 115g

CRUST: Blend the almond flour, tapioca starch, salt and sugar in a food processor. Pulse in the cold butter cubes until mixture is like coarse crumbs. Add the water 1 tbsp at a time and pulse each time. Press the dough into a buttered 8” tart pan, about 1/4 inch thick, especially on the sides. Pierce with fork and refrigerate 20-30min. TART: Preheat oven to 375°F. Peel, core, and cut the apples into thin slices. Form a pretty pattern on the uncooked refrigerated crust. In a bowl, whisk together the sugar, heavy cream, sour cream, eggs, and vanilla. Pour over the apples. Bake 45min until golden.

Tips

Time Saver • You can make the dough in a mixer, but it will likely not be as crispy as the mixer tends to blend too thoroughly.
Neat Trick • If you have apples and egg-cream mixture left over, you can place apples in little pan and pour on top to make additional desserts.
