1/2 cup Quinoa Flakes 51g
1/2 cup Gluten-Free Flour 79g
1 tbsp Sugar 12.5g
1 tsp Baking Powder 4.6g
1/2 tsp Baking Soda 2.3g
1/2 tsp Salt 3g
1/4 tsp Ground Cinnamon 0.65g

Prepare buttermilk by mixing lemon juice and milk. Set aside. Whisk together dry ingredients. Add melted butter and egg to buttermilk and mix well. Combine with dry ingredients. Batter will thicken after a few minutes. Fry 1/4cup-fuls on hot skillet, flipping when bubbly.
