Ingredients

Yields: 36 Cookies (18 Servings)

1/4 cup Coconut Oil 54.5g
 1/2 cup Butter, Ghee, or Palm Shortening 113.5g
3/4 cup Sugar 150g
2 Eggs 88g
2 tsp Vanilla 8.4g
1/4 tsp Almond Extract
1/2 tsp Baking Soda 2.3g
1/2 tsp Salt 3g
2 1/4 cups Almond Flour 510.75g
1/2 cup Coconut Flour 60g

Cream butter, oil and sugar. Add eggs, vanilla and extract. Whisk together dry ingredients and combine with wet ingredients. Form dough into a flattened ball and refrigerate at least 30min. Preheat oven to 350°F. Line sheets with parchment. Between two sheets of parchment paper, roll dough to 1/4" thick. Peel one side off, place it back on and peel off the other side. Use cookie cutters or a knife to cut shapes. Bake 14min.
