Blend or process dates, water, and vanilla into a paste.
Separately, whisk almond meal, flax, cayenne, 1/2 tbsp cinnamon, and salt. Add half the date paste, oil and nectar, and mix by hand until dough forms.
Add raisins and 1tbsp cinnamon to remaining paste, and blend or process until smooth.
Roll out dough to 1/4" thick between parchment papers, peel top off, place back on and peel off other side. Spread the paste all over dough, sprinkle with raisins and nuts, and roll into a log. Refrigerate.
Cut 1" slices.
