1/3 tsp Stevia 0.99g
1/2 cup Currants 56g
1/2 tsp Apple Cider Vinegar 2.5g
1/3 cup Vegetable Oil 71.94g
2/3 cup Potato Starch
2/3 cup Quinoa Flour 75.04g
2/3 cup Almond Meal 62.7g
2 tsp Cream of Tartar 6g
1 tsp Baking Soda 4.6g
Pinch Salt 0.2g
3 Eggs 132g
1/4 cup Sultanas 38.75g
handful Sunflower Seeds

Preheat oven to 350°F (180°C). Line square pan. Whisk together baking soda, cream of tartar, stevia, potato starch, and spices. Add almond meal, quinoa flour, then eggs, oil, vinegar, and enough water to form a batter. Stir in raisins. Bake 20min. Serve warm.

Ingredient Tip • If not using almond flour, just use a little more quinoa flour.
