Ingredients

4 Eggs, separated 176g
 1/4 cup Butter or Olive Oil 56.75g
1 tbsp Lemon Juice 15.25g
1 tbsp Orange Juice 15.56g
1 tbsp Lemon Zest 6g1 cup + 1tbsp Almond Meal  gr_5f1c9e893f46701/3 cup Quinoa Flour 36.96g
1/4 tsp Salt 1.5g
1/3 cup sugar 66g

Preheat oven to 350°F. Butter and line one large or two small cake pans. Separate egg whites from yolks. Beat egg yolks and 1/3 cup sugar until pale and thick. Add oil or melted butter, juices and zest. Whisk together 1/3 cup sugar and flours, then fold into the batter. Beat egg whites and salt until foamy, then gradually add remaining sugar and beat until stiff. Fold into batter. Bake 30min.
