Creamy Mushroom Quinotto

Grams 
1 cup White Mushrooms 96g
1 tbsp Butter 14.2g
2 tbsps Butter 28.4g
1 Onion 110g
1 Carrot 61g
1 clove Garlic 3g
1 cup Quinoa 170g
1/2 cup White Wine 124g
2 cups Vegetable Stock 442g
1/4 cup Grated Parmesan 25g
1/4 cup Heavy Cream 30g
Ground Black Pepper* 0.1g* Optional

Sauté mushrooms in 1tbsp butter. Remove mushrooms from pan and set them aside. Add remaining butter to pan and sauté the carrots and onion until onions are transluscent. Add garlic and saute 30sec. Add quinoa and saute 2 min, stirring. Add white wine and stir until absorbed. Add stock and cover. Simmer on lowest heat for 13min. Stir in parmesan and stir until dissolved, then add cream, pepper and mushrooms. Serve immediately.
