Move oven rack to top third. Preheat oven to 400°F. Line baking sheet.
Drain and dry tofu. Slice into two 1" slabs.
To further drain and dry the tofu, stack the slabs and clean dish rags (or paper towels), and place a heavy board on top.
When tofu is ready, cut it into cubes or triangles.
Toss with whisked oil and soy sauce, then with starch.
Bake in a single layer for 15min, flip, and another 10min.
Combine the remaining ingredients and simmer about 10min until thickened.
