Tapioca-Almond Crackers

2 tbsps Water 29.56g
1/2 cup Almond Milk 131g
1/2 tsp Baking Powder 2.3g
2/3 cup Almond Flour 152.09g
1/4 tsp Baking Soda 1.15g
1/2 tsp Salt 3g
1 cup Tapioca Starch 128g
1 tsp Dried Basil 0.7g
1/2 tsp dried Marjoram 0.3g
1 tbsp Butter 14.2g
Extra Salt 0.4g

Preheat oven to 350°F. Oil 2-3 cookie sheets. Combine starch, salt, baking soda, baking powder, and herbs. Mix in almond milk, melted butter, then almond meal. Drop a half-teaspoon onto sheet. The batter should spread into a perfectly thin cracker. Add a little warm water if the batter is too dry, or a little almond meal if it's too wet. Fit 12 crackers per sheet. Bake 25-30 min, flip, salt and bake another 15min at 300°F. Mind the oven to make sure they do not burn. Cool on rack.

Ingredient Tip • You can sub regular milk for almond milk.
Alternative • Sprinkle parmesan cheese on top midway through baking.
