Amaranth, Quinoa and Dark Chocolate Cake

Ingredients

41/2 oz dark chocolate 581.175g
7 tbsps butter 99.4g
1/2 cup cane sugar 100g
3 tbsps amaranth flour 26.25g
3 tbsps Quinoa Flour 21g
1 tsp pure vanilla extract 4.2g
1/3 cup chopped pecans 32.67g
3 eggs 132g
Pinch salt 0.2g

Preheat oven to 350°F. Butter and line pan. In double boiler, melt butter and chocolate. Beat sugar, vanilla and yolks until pale yellow. Beat in the melted chocolate, then the flours. Stir in the nuts. Beat egg whites and salt until firm, then fold into batter. Bake 45 min until knife comes out moist but clean.
