Ingredients

2/3 cup non-dairy milk 162.81g
1 tbsp apple cider vinegar 14.9g
3/4 cup gluten-free flour 118.5g
1/2 cup cornmeal 58.5g
1/2 cup corn flour 58.5g
2 tsps baking powder 9.2g
1 tsp baking soda 4.6g
1 tsp xanthan gum
1 tsp salt 6g
1/2 cup coconut oil, melted 109g
1/3 cup agave nectar 72.6g
1/3 cup applesauce 80.52g
2 tsp vanilla extract 8.4g
1/2 cup frozen corn kernels 68g

ALWAYS check labels before buying or consuming!
Preheat oven to 325°F. Line tins. Without stirring, combine apple cider vinegar and milk and wait 5min for buttermilk to form. Separately, mix the wet ingredients together and the remaining wet ingredients together, then combine. Fold in buttermilk. Stir in corn. Bake 20min.
