3/4 cup Potato Flour 120g
1/4 cup Arrowroot Starch 32g
1/2 tsp Baking Soda 2.3g
1 tsp Cream of Tartar 3g
Pinch Salt 0.2g

Preheat the oven to 340°F (170ºC). Line sponge cake pan. Beat egg whites until stiff. Gradually add sugar, beating all the while. Beat in yolks one at a time. Separately, whisk remaining ingredients, then fold into wet ingredients. Bake 15-20min. Let cool 5min then invert over wire rack to cool.
