Socca: A Naturally Chickpea Flatbread

Ingredients

Grams 
1 cup Garbanzo Bean Flour 92g
1 cup Water 236.6g
1 1/2 tbsps Olive Oil 20.25g
1/2 tsp Salt 3g
1 tsp Olive Oil, for frying 4.5g
1/8 tsp Za'atar** Optional

Whisk together all ingredients and let rest up to 2hrs. Preheat oven to 450°F with 10" skillet inside. Carefully remove skillet and add 1tsp olive oil around to swirl. Whisk batter and immediately pour half into the skillet. Bake 8min in middle rack, move to top rack and broil until top blisters and browns. Slice, sprinkle wit salt, pepper, and/or spices. Drizzle with olive oil.
