Preheat oven to 350°F. Line cookie sheet.
In a large bowl, whisk the dry ingredients until well combined.
In a small bowl, mix yeast and 1/4 cup +1 tbsp warm water.
Wait 2min then sprinkle in 1 1/2 tsp sugar.
Wait three more minutes and add the olive oil and remaining water.
Make a well in the dry ingredients and stir in the wet ingredients with a wooden spoon until well combined.
Use a rubber spatula to flatten the dough onto cookie sheet into a 9" wide circle about 1/4 inch thick .
Bake 25-30 minutes, or until it begins to look dry.
Remove from oven to add toppings and bake 20-25 additional minutes.
