1 1/2 tsps Baking Soda 6.9g
1 tsp Salt 6g
1/2 cup Apple Sauce (or Pear Sauce) 122g
1 cup non-dairy or dairy milk 244g
1/2 cup Canola Oil 109g
2 tsp Vanilla Extract 8.4g

    3 1/2 cups Confectioners’ Sugar 420g
    1 cup Vegan Shortening 205g
    2 tbsps Coconut Milk 28.6g
    1 1/2 tsp Vanilla Extract 6.3g

Preheat oven to 350°F. Grease and flour baking pans. In small bowl, mix apple sauce and baking powder then set aside. In large bowl, mix dry ingredients (for cake), then add remaining liquid ingredients (for cake) and beat well, adding applesauce mixture and boiling water last. Bake 30-35 min. Cool. For frosting: Beat all ingredients until fluffy (about 5min).
