2 tbsps Maple Syrup 40g
1 cup Dried, Unsweetened & Shredded Coconut 93g
1/2 cup Almond Flour 113.5g
Pinch Salt 0.2g
1 Egg White 30g
3 Eggs 132g
2 Egg Yolks 34g
1/3 cup Maple Syrup 103.95g
1/3 cup Lemon Juice 80.52g
1 tbsp Lemon Zest 6g
1/3 cup Fine Almond Flour 74.91g

Preheat oven to 350°F (175°C). Line a loaf pan. CRUST: Mix coconut oil, maple syrup, shredded coconut, almond flour and salt over medium heat until just melted. Off the stove, gradually whisk in the egg white. Press into pan. Bake 10min. FILLING: Beat eggs and yolks, then add remaining ingredients and beat until smooth. Pour into crust and bake 20min until set. Cool completely.
