Tomato Potato Frittata

Ingredients

2 Egg Whites 60g
1/2 cup Grated Parmesan 50g
1/3 cup Fresh Basil 7.92g
3/4 tsp Salt 4.5g
1/2 tsp Ground Black Pepper 1.15g
4 cloves Garlic 12g
3 tbsps Olive Oil 40.5g
1/2 lb Potatoes, cubed small 226.8g
2 cups Tomatoes, chopped 298g

Whisk together eggs, egg whites, half the parmesan, basil, salt, and pepper. Fry garlic in 1tbsp olive oil in heavy 9" oven-proof skillet. Remove garlic and set aside. Fry potatoes and saute 6 minutes. Remove potato and set aside. Fry tomatoes in 1 tbsp olive oil about 4min. Preheat broiler. Transfer potatoes and garlic back to skillet, and and toss with 1 tbsp olive oil. Cover with egg mixture and cook over medium-high heat about 3 minutes, lifting the sides intermittently to make sure all the egg cooks. Cover, reduce heat to medium, and cook 5 minutes. Broil 5 minutes about 7" from flames. Sprinkle with remaining parmesan and broil another 2 minutes.
