Tofu Bok Choi Dumplings

    1/4 cup dried quinoa
    4 green onions 60g
    2 cloves garlic 6g
    2 tbsp soy sauce 31.88g
    8 oz Silken Tofu 226.8g
    1/2 small head bok choi
    1/2 tsp grated fresh ginger 1g
40 Wonton Wrappers 1280g
4 tbsp Vegetable Oil 54.4gDipping Sauce  gr_69c9b8064f6b80
    3 tbsp soy sauce 47.82g
    1 tbsp white vinegar 14.9g
    2 tsp sugar 8.32g

ALWAYS check labels before buying or consuming!
• Boil quinoa with 1/2 cup water for 7min in a pan with a lid. Turn heat off and let sit. • Clean then julienne the bok choi and green onion. • Gently mix tofu, cooked quinoa, bok choi, green onion, grated ginger, pressed garlic, and soy sauce. • With wonton on counter, place 1 tsp mixture in center (do not overfill) • Moisten edges and press to close. Place on a cookie sheet. • Repeat until all wontons are sealed. • For each batch of 10: add 1tbsp oil to frying pan and fry on all sides for a few minutes. • Add 2tbsp water and cover with lid. Steam for 3 minutes. • Remove lid and let cook until water has evaporated. Remove from pan and proceed with next batch.

Serving Idea • Serve with Roasted Garlic Eggplant and white rice.
