Like Starbucks Cake Pops, but with brownie!

Ingredients

Yields: 16 pops (16 Servings)

Prepare your favorite brownie mix or recipe and let cool to room temperature. Using a spoon then a fork, tear brownies apart to form crumbs. Beat butter and cocoa powder, then beat in confectioner's sugar, scraping sides as you go. Mix in brownie crumbs with a spoon. You can use mixer for this as well, but not for too long. Form balls 1.5" wide with clean hands. Melt 1/2 cup chocolate chips, then mix-in 1/4 cups unmelted chips to temper the chocolate (so it hardens around the pops.) Using clean fingers, fork, lollipop sticks, or cut skewers, dip each pop into melted chocolate to coat it entirely. Work quickly in 2 batches (using 3/4 cups chocolate chips for each batch.) If using sticks, use foam-type object to let the pops cool upright. If using hands, place balls on wax paper to cool, then add sticks.

Ingredient Tip • To make egg-free pops using a brownie mix, you can substitute 3 tbsps cream cheese for each egg.
