Double Peanut Butter Chocolate Chip Cookies

1 cup Pitted Dates 260g
1 Ripe Banana 118g
2 tbsps Peanut Butter 32g
1 cup Almond Meal 95g
1 cup Rolled Oats 81g
1/4 cup Peanut Oil 54g
1/4 cup Semi-Sweet Chocolate Chips 42g

ALWAYS check labels before buying or consuming!
Soak dates in warm water 10min. In a food-processor, pulse drained dates into a coarse paste, then add banana, peanut butter, almond meal, and oats, pulsing and scraping sides until you get a sticky dough. (If too sticky add more almond/oats). Stir in chocolate and peanut butter chips. Preheat oven to 350°F while you refrigerate the dough 10min. Line baking sheet. Bake tablespoonfuls 15min. Transfer parchment paper to cooling rack.
