2 tbsps Dessicated Coconut 8.86g
1/4 tsp Ground Cardamom 0.5g
1/3 cup Dried Currants
1/2 cup Almond Meal 47.5g
1/2 tsp Ground Cinnamon 1.3g
1/2 tsp Cream of Tartar 1.5g
1/2 tsp Vanilla 2.1g
1/2 cup Vegetable Oil 109g
2 Eggs 88g
1 cup Brown Sugar 145g
1/3 cup Potato Flour 52.8g
1 tsp Baking Soda 4.6g
1/4 grams Ground Nutmeg
pinch Sea Salt
2/3 cup Chopped Walnuts 82.5g

Preheat oven to 320°F (160°C). Line rectangular pan with parchment. Whisk together flour, baking soda, cream of tartar, salt, and spices. In separate bowl, cream eggs and brown sugar. Add vanilla, oil, almond meal and coconut. Fold this mixture into the dry ingredients until well combined, then fold in the dried fruit. Bake 30 min, covering with tin foil midway through baking.
