Coconut Flour Country Biscuits

Ingredients

Grams 
15 oz Canned Coconut Milk 425.25g
2 tbsps Lemon Juice 30.5g
2 cups Coconut Flour 240g
2 tsp Cream of Tartar 6g
2 tsp Baking Soda 9.2g
1 1/2 tsps Salt 9g
1/2 cup Palm Shortening 102.5g
9 tbsps Palm Shortening 115.2g

Preheat oven to 450°F. Line baking sheet with parchment paper. In a small bowl, mix lemon juice and coconut milk. Set aside. Mix together dry ingredients, then add 1/2 cup shortening to form coarse meal. Gradually mix-in the milk mixture to form a pliable dough. If dough becomes sticky you have added too much. Knead in remaining shortening 3tbsp at a time. Do not overwork. Roll out about 1" thick and cut 2" circles using cookie cutters or a glass. Bake 16min.
