Not So Chilly Chili

Ingredients

Yields: 10 cups (10 Servings)

15 oz canned diced tomatoes with green chilies, undrained 425.25g
15 oz canned chili beans, undrained 425.25g
15 oz canned refried black beans or other refried beans 425.25g
2 cups water 473.2g
1/4 cup olive oil 54g
1-2 cups baby bella mushrooms, diced 130.5g
1/4 large sweet onion, diced
3 small bell peppers (red, yellow, green), seeded and diced 222g
4 cloves garlic 12g
2 tbsps honey 42g
1/4 cup brown sugar 36.25g
1 tbsp cocoa powder* 5.4g
1 tsp cumin 2g
1 tsp basil
1 tsp marjoram 0.6g
1 tsp chili powder 2.7g
1 tsp red pepper flakes 1.8g
1/4 tsp black pepper 0.575g
1/2 tsp salt 3g
3 cups cooked quinoa 555g* Optional

ALWAYS check labels before buying or consuming!
Saute all vegetables and spices in oil in large pot over medium heat, stirring constantly until all oil is absorbed. Add water, chili beans, refried beans, tomatoes, cocoa, honey and brown sugar. Simmer, covered, for about 30 min. Add cooked quinoa. Simmer 15 more minutes.
