Easy Potato, Ham and Veggies Mini Frittatas

1/2 cup Chopped Ham 70g
1 cup Chopped Broccoli 88g
1 cup Cubed Potato 150g
1/2 cup Shredded Monterey Jack Cheese 66g

Preheat oven to 375°F. Grease 12 muffin tins. Beat eggs, milk, salt, and flour well. In separate bowl, mix ham, broccoli (or other veggies) and potatoes, then spoon into each muffin cup and cover with egg mixture. Sprinkle with cheese. Bake 15 minutes until center is set.
