    1/3 cup Tapioca Starch 42.24g
    1/2 cup Almond Flour 113.5g
    1/2 tsp Salt 3g
    1/2 cup Butter 113.5g
    1 Egg 44g

    1/4 cup Butter 56.75g
    1 cup Sugar 200g
    1 cup Almond Meal 95g
    4 Eggs 176g
    1/4 cup Lemon Juice 61g
    1 tbsp Lemon Zest 6g
    1 tsp rum or kirsch* 4.6666g
1/4 cup Grain-free Confectioners’ Sugar 30g* Optional

Preheat oven to 375°F. Grease 9" square pan. CRUST: Whisk dry ingredients from pie crust recipe PLUS 1tbsp confectioner's sugar. With pastry cutter or food processor, mix butter into dry ingredients until coarse meal forms. Mix-in egg just until dough forms. Roll-out dough between two sheets of wax paper, peel off the top, place it back on and peel off the other side. Place in pan and prick with fork. Bake 15 min. FILLING: Preheat oven to 390°F. Beat or whisk all ingredients until thoroughly mixed. Pour into pre-baked shell. Bake 25min. Cool. Dust with the remaining sugar.
