Rinse and soak sago 1hr in 2 cups water.
Drain water into saucepan. Add coconut milk and vanilla pod. When water is boiling, add drained sago and stir about 5min. Remove from heat when sago is clear and thickened.
Remove vanilla pod and add sweetener.
Pour into serving dishes and cool.
Mix starch with 3tbsp OJ. Simmer rest of OJ in saucepan, then add the starch/OJ mixture and stir until thick. Pour over cooled pudding and refrigerate.
