    1/2 cup Butter 113.5g
    2 tbsp Vegetable Oil 27.2g
    3/4 cup Sugar 150g
    2 tbsps Cocoa Powder 10.8g
    1 tsp Vanilla Extract 4.2g
    3/4 tsp Coarse Salt 4.5g
    2 tbsp sugar 25g
    6 Eggs 264g

    1 cup Heavy Cream 120g
    1/2 cup Mascarpone 116g
    3 tbsp Confectioners’ Sugar 24g

CAKE Preheat oven to 350°F. Grease 9" springform pan. Melt chocolate with oil and butter in double boiler (or microwave). Beat 2 eggs, 4 yolks, cocoa, vanilla, salt and 1/4 cup sugar. Gradually beat in melted chocolate. Beat 4 egg whites, gradually beating 1/2 cup sugar until firm. Fold into batter. Pour into pan and sprinkle 2tbsp sugar on top. Bake 35min. Cake is ready when cake pulls away from rim. Cool in pan (let it collapse). WHIPPED TOPPING Beat all ingredients until thick.
