1 tsp Baking Powder 4.6g
1/2 cup Brown Cane Sugar 72.5g
1/2 cup Sugar 100g
1/2 cup Coconut Milk 113g
2 tsp Vanilla 8.4g
2/3 cup Sorghum Flour 81.07g
1/3 cup Quinoa Flakes 33.66g
1/2 tsp Baking Soda 2.3g
2 tsps Ground Cinnamon 5.2g
1/2 tsp Salt 3g
1 cup Semi-Sweet Chocolate Chips 168g

Preheat oven to 350°F. Line muffin tins. In small bowl, mix apple sauce and baking powder and let rest 5min. Combine dry ingredients in a large bowl. Gently stir pumpkin, sugar, milk, and vanilla into applesauce mixture. Combine all ingredients into a thick batter. Stir in chips. Bake 20-25 min (15-20min for mini-muffins).
