Preheat oven to 350°F. Line muffin tins.
Melt butter then mix in banana, syrup and vanilla until very liquid.
Add flax and mix 2 more minutes.
Mix dry ingredients in separate bowl then add to wet.
Dough will seem liquid.
Stir in chocolate chips.
Pour into muffin liners. Place in fridge 5 minutes or longer -- coconut flour will absorb some of the liquid.
Bake 15 minutes. Cool completely.
Tips
Alternative • To make scones, use half the banana and refrigerate dough in scone dish.
