2 cups cooked quinoa 370g
2 cups almond meal 190g
1/4 tsp salt 1.5g
2 tsps pumpkin pie spice 3.4g
1/2 cup canned pumpkin 122.5g
1/3 cup coconut crystals 66g
1 tsp vanilla extract 4.2g
2 eggs 88g
2 tbsps coconut oil, melted 27.2g
1 cup mini dark chocolate chips, divided 168g

Preheat oven to 350°F. Grease cookie sheets. Mix together the quinoa, almond meal, salt, and pumpkin pie spice. Separately, mix pumpkin, coconut crystals, vanilla, eggs, and coconut oil. Combine wet and dry ingredients. Stir in 1/2 cup chocolate chips. Bake 20 minutes or until golden. Cool before transferring. Melt another 1/2 cup chocolate chips. Drizzle over the cookies.
