Quinoa Coconut Granola Bars

Ingredients

Yields: 12 bars (12 Servings)

1 cup Quinoa, uncooked 170g
1 cup Oats 81g
1/2 cup Coconut Flakes
1/2 cup Pecans or other nuts 47.5g
 1/2 cup Raisins 77.5g
    or 1 cup Dried Cranberries 160g
1/4 tsp Salt 1.5g
1/2 cup Peanut Butter 129g
3/4 cup Honey 254.25g
1 tbsp Oil 13.6g
3 tbsps Brown Sugar 27.3g
1 cup Chocolate Chips, melted* 168g
1 tbsp Oil* 13.6g* Optional

ALWAYS check labels before buying or consuming!
Preheat oven to 350°F. Grease 9x13 rimmed pan. When oven reaches 350°F, spread oats and quinoa on a cookie sheet and bake 8 min to toast. Remove and pour into a large bowl. Add coconut, pecans, and dried fruit. Bring remaining ingredients to a boil in a saucepan, then immediately pour into the large bowl, mixing until all ingredients are covered. Transfer to baking pan and press down. Bake 20min. Cool 2hrs before cutting. Melt chocolate chips and oil and mix well. Dip one side of bars, and invert them onto parchment to dry.
