Amaranth & Nuts Pancakes

Ingredients

Yields: 12 pancakes (4 Servings)

1/2 cup Nuts 47.5g
1 cup Amaranth Flour 140g
1/2 cup Arrowroot Starch 64g
1 tsp Baking Soda 4.6g
1/4 tsp Salt 1.5g
1-2 tbsps Maple Syrup 20g
1 1/4 cups Water 295.75g
2 tsp Cream of Tartar 6g
2 tbsp Vegetable Oil 27.2g
1 tsp Ground Cinnamon 2.6g
2 tsp Lemon Juice 10.16g

ALWAYS check labels before buying or consuming!
Grind all ingredients in blender, starting with nuts, then dry ingredients and finally liquids. Fry pancakes on non-stick pan, flipping when bubbles appear.

Tips

Ingredient Tip • Tastes better when you use the same oil as the nut (eg. almonds and almond oil, hazelnut and hazelnut oil); else use safflower or sunflower oil.
