Mix dry ingredients, make a well, and add oil and 1-2 tbsp water.
Mix from outside-in.
Add water (or flour) until dough is soft but not too sticky. Knead 5-10min.
Cover with plastic wrap and refrigerate at least 30min.
Working in batches, roll dough to pasta thickness (or use pasta-maker). Cut pasta strips.
Boil 3-4min in salted water.
