Amaranth Soda Bread

Ingredients

Yields: 1 loaf (8 Servings)

3/4 cups Vitamin C Powder 108g
3/4 cup Water 177.45g
2 1/4 cups Amaranth Flour 315g
3/4 cup Tapioca Starch 96g
 1 tbsp Ground Anise or Fennel Seed* 5.8g
1/2 cup Amaranth Flour 70g
1/2 tsp Salt 3g
2 tbsps Oil 27.2g
2 tbsps Boiling Water 29.575g
2 tsp Baking Soda 9.2g* Optional

Preheat oven to 400°F. Dissolve Vitamin C powder in water. Separately, whisk together amaranth flour with starch, salt, and ground spices. Mix in Vitamin C solution and oil. Dissolve baking soda in boiling water, and mix into the dough. Sprinkle 6tbsp amaranth flour onto a surface and knead dough for 3minutes. Sprinkle remaining amaranth flour (2tbsp) onto baking sheet. Form dough into a 1" thick circle and place on sheet. Using serrated knife, draw an X on top. Bake at 325°F for 55min or until cooked through.
