2 tsps Apple Cider Vinegar 10g
360 g Gluten-Free Flour 360g
50 g Corn Flour 50g
2 tsps Baking Powder 9.2g
1 tsp Baking Soda 4.6g
450 g Sugar 450g
160 ml Sunflower Oil 151.52g
4 tsps Pure Vanilla Extract 16.8g

Preheat oven to 350°F (180°C). Oil two round 8" pans. Whisk soy milk with vinegar until thickens. In a large bowl, whisk the flour, corn starch, baking powder, baking soda, and sugar. Whisk oil and vanilla into thickened soy milk. Pour into a well in dry ingredients and slowly stir until smooth. Bake 30min or until toothpick comes out clean. Cool 15min before inverting onto rack.
