Coconut Squares

Ingredients

2 tbsps Coconut Nectar 48g
5 cups Unsweetened Dried & Shredded Coconut
1 oz can Coconut Milk 28.35g
1 cup Dairy-Free Milk 243g
5 tbsp Coconut Oil 68g
1/4 tsp Coconut Aminos
16 oz Cottage Cheese 453.6g
1 cup Coconut Crystals, plus 2 tbsps to sprinkle 200g
3 tbsps Pure Vanilla Extract 39g
1/2 cup Flax Seeds 84g
 5 eggs 220g
    or 7 egg whites 210g

ALWAYS check labels before buying or consuming!
Preheat oven to 350°F. Grease pan with coconut oil, then sprinkle with some coconut crystals. Blend together until creamy, adding in this order: coconut milk and non-dairy milk (like rice milk), coconut oil, cottage cheese, aminos, nectar, coconut crystals, flax seeds, shredded coconut, eggs, and vanilla. Pour into pan. Sprinkle with coconut crystals. Bake 40min until brown. Let cool then slice into squares.
