4 tbsps Canola Oil 56g
1/2 tsp Vanilla Extract 2.1g
1/2 cup Quinoa Flour 56g
dash Salt 0.4g
1/8 cup Water 30.758g

Preheat oven to 350°F. Line muffin tins. Mix flour and salt, and make a well. Separately, beat egg yolk and 1tbsp sugar, oil and vanilla. Pour into well and gradually add water, mixing until smooth. Beat egg whites to soft peaks, gradually add 4tbsp sugar. Fold into batter. Bake for 25 min.
