Grandma's Syrup Sorghum Pancakes

 3/4 cup Potato Starch, Corn Starch, Arrowroot Starch, or Tapioca Starch 96g
2 packets Gelatin
2 tbsp Baking Powder 27.6g
1/2 tsp Baking Soda 2.3g
1 tsp Salt 6g
1/3 cup Sugar 66g
2 tsps Cinnamon 5.2g
2/3 cups Dairy-free butter 152.09g
2 tsp Vanilla 8.4g
1 tbsp Vinegar 14.9g

    1/2 cup Brown Sugar, lightly packed 72.5g
    1/2 cup Water 118.3g
    1 tsp Vanilla 4.2g
    3/4 tsp Cinnamon 1.95g

Mix vinegar with milk and set aside. Beat butter into dry ingredients, then add milk/vinegar mixture and vanilla. Add a little more milk if the batter is too dry. Fry on skillet, flipping after bubbles form. For the syrup, bring all ingredients to a boil, stirring frequently.
