Quinoa and Wheat Cookies with Coconut & Chocolate Chunks

Ingredients

1.5 cups whole wheat flour 180g
1 tsp salt 6g
1/2 tsp baking powder 2.3g
1/2 tsp baking soda 2.3g
1/2 cup unsalted butter, room temperature 113.5g
1/4 cup sugar 50g
1/4 cup light brown sugar 55g
1/4 cup honey 84.75g
2 large eggs 100g
1 tsp vanilla extract 4.2g
1/2 tsp almond extract
1 cup cooked quinoa, cooled 185g
1/2 cup unsweetened dessicated coconut 35.5g
1 cup dark chocolate chips 168g

Preheat oven to 375°F. Line baking sheets. Beat butter, sugars, and honey until fluffy. Add eggs, vanilla, and almond extract. Whisk together remaining dry ingredients and add 1/2 cup at a time. Stir in quinoa, coconut and chocolate. Bake 13min.
